Slow Cooker Tortilla Soup
Ingredients
Boneless Chicken Breasts
3pk
Chili Powder
2 teaspoons
Cumin
1 teaspoon
Med. White Onion
1 Chopped
Red Bell Pepper
1 Seeded & Chopped
Yellow Bell Pepper
1 Seeded & Chopped
Diced Tomoatoes
1 can(14.5oz.)
Rotel
1 can
Low Sodium Chicken Broth
3 Cups
Tomoato Paste
1 can(4oz.)
Chipotle Pepper in Adobo
1 pepper
Black Beans
1 can
Salt & Pepper
To Taste
Lime

TOPPINGS:
Salsa-Holics Salsa
2 Tablespoons
Sour Cream
Avocado
Cilantro Leaves
Grated Cheese
Tortilla Strips
(Crushed Tortilla Chips will work also)
Directions
Place the chicken in the slow cooker
Add
• Chili powder
• Cumin
• Salt & Pepper
Add
• Chopped Onion
• Chopped Bell Peppers
• Tomatoes
• Chicken Broth
• Tomato Paste
• Chipotle
• Black Beans
Stir, place the lid on the slow cooker, and cook on high for 5 hours or high (or 8 hours on low)
Stir in the lime juice
Using 2 forks, break up the chicken into chunks (or you may shred it more fine.)
Taste and add more salt if the soup needs it
Serve it piping hot in a bowl with avocado, sour cream, grated cheese, cilantro leaves, Salsa-Holics Salsa on top!
