Tater Tot Enchilada Bake

Ingredients
Ground Beef
1 lbs
Yellow Onion
1 med
Minced Garlic
2 cloves
Olive oil
1 Tablespoon
Tater Tots
2 cups
Enchilada Sauce
1 can
Mexican Blend Cheese
1 cup
Salt & Pepper
To taste
Taco/Fajita Seasoning
2 tsp.
Sliced black olives
1/2 cup
Sliced Jalepeño
1/2 cup
Salsa-Holics Salsa
garnish
Scallions or Cilantro
garnish

Directions

Preheat Oven to 350° F
Add to skillet
• Olive oil
• Diced onions
• Minced garlic

Cook until tender. Remove into a bowl, and set aside

Add to skillet (Yes, you can use the same skillet used to cook the onions)
• Ground beef
• Taco/fajita seasoning

Brown the ground beef, remove from heat, strain out the grease.

Combine in skillet
• Seasoned ground beef
• Cooked onions/garlic
• Enchilada sauce

Cook for 2-3 minutes until evenly mixed together.

Transfer the ground beef mixture from the skillet into a 9 x13 baking dish.
Scatter Tater Tots on top of ground beef mixture.
Top with shredded cheese, sliced black olives, sliced jalepeños.
Bake, uncovered for 15-20 minutes, or until the cheese is bubbly and tater tots are golden brown.
Remove from the oven, garnish with Scallions or Cilantro, and top it off with Salsa-Holics Homestyle salsa!
